
Last weekend we went strawberry picking with the girls. In addition to being a great nature lesson, about the source of our food, it inspired me to look up fresh summer recipes utilizing this in-season delicacy. That’s where I came across the idea for this strawberry soup.
We love serving strawberries to our girls. This fruit provides guilt-free goodness. Strawberries are packed with vitamin C and are also high in fiber, folate, potassium and antioxidants. Unadorned, these berries have only 55 calories per one cup serving.

Chilled Strawberry Ingredients
This is a simple recipe that requires just a few healthy ingredients.
- 1 1/2 pounds fresh strawberries
- 1 1/2 cups greek yogurt
- 1/2 cup orange juice
- 1/2 cup brown sugar
Chilled Strawberry Directions
- Blend strawberries in blender until smooth. Add yogurt, orange juice, sugar and give it one more shot in the blender.
- Chill in fridge for at least 1 hour.
My girls love this light summer soup. It’s like having dessert at the beginning of the meal. Serve in pretty tea cups or bowls and maybe add a touch of yogurt and a bit of mint if you want to be fancy.
